This is the recipe I always turn to when we want Chocolate Brownies; quickly. Everything about the recipe is easy, quick and they are ready to eat hot in about 30 minutes!
Taken from the BBC Good Food 101 Cupcakes and Small Bakes book – the page just falls open now….
100 g dark chocolate, broken into chunks
100g milk chocolate, broken in chunks
100g light muscovado sugar
100g dark muscovado sugar
3 large eggs at room temperature and lightly beaten
140g plain flour
140g walnuts, roughly chopped
Pinch of salt
Apparently serves 8!!
Preheat oven to 180C/169C fan/Gas 4 and line the base of a shallow 20cm square baking tin with baking parchment. I use silicone because it’s quicker!
Melt the dark and milk chocolate along with the butter in a heatproof bowl over a pan of simmering water. I chuck it in the microwave because it’s quicker!
Stir in the sugars off the heat. Cool for a little while you prepare the rest of the ingredients.
Stir the eggs into the chocolate mixture, followed by the flour, walnuts and a pinch of salt until well combined – check that all the flour is combined and not coated round the walnuts!
Pour the mixture into the prepared tin and back for 25 to 30 minutes – I always take it out on the 25 minute mark because I like them gooey. An inserted skewer comes out with sticky crumbs. Cool in the tin.
Cut into chunks and enjoy xx
